Made from the finest white pork meats , Paiola Alentejana is an excellent product that combines tradition, quality and authenticity.
Produced with carefully selected raw materials, this specialty results from the perfect balance between ancestral recipes and modern food safety and control processes , preserving the genuine flavor and rustic character of the Alentejo region.

The manufacturing process follows the artisanal method of the master smokers, divided into several carefully supervised phases:

- Chopping and Selection: only the finest cuts — loins and legs — are used, ensuring a firm texture and rich flavor.

Traditional Seasoning: paprika paste, garlic, and natural spices give the intense and unmistakable flavor of Alentejo charcuterie.

- Smoked with Holm Oak Wood: a slow and artisanal process that gives Paiola the aroma and golden color typical of traditional smokers.

- Curing and Quality Control: After curing, each piece is individually inspected, ensuring perfect color, aroma, and flavor.

- Secure Packaging: Paiola is packaged in a modified atmosphere , preserving freshness, texture, and flavor until the moment of consumption.
