Farinheira, as the name suggests, is made with flour and pork, paprika paste, garlic, salt, and other spices. It is a typical Portuguese sausage and is unique in that its casing is not completely filled. It is cured by smoking, similar to the process used for linguiça and chouriço. This type of sausage was created by Portuguese Jews during the Inquisition as a way to simulate the consumption of pork, which is the filling of most sausages.
It can be served boiled, as a side dish to Portuguese stew or feijoada, but it doesn't lose quality if fried, baked, or raw.
