Ingredients for asparagus migas
- 500 g Alentejo bread, 2 to 3 days old
- 1 bunch green asparagus, about 300 g
- 4 fresh eggs
- 5 cloves garlic
- 80 ml Figueirinha Extra Virgin Olive Oil
- 1 tablespoon white wine vinegar
- Hot water, as needed
- Salt and black pepper, to taste

How to make asparagus migas with poached eggs
- Prepare the bread. Cut the bread into small pieces and place it in a bowl. Gradually drizzle with hot water, stirring after each addition. Let it rest for 10 minutes. The bread should be moist and pliable, but without accumulated water; drain or squeeze out any excess.
- Prepare the asparagus. Wash them and remove the tough ends of each stalk. Cut the rest into 2 to 3 cm pieces, leaving the tips whole.
- Sauté the asparagus. Heat half of the olive oil in a large skillet. Add three minced garlic cloves and let them release their aroma without browning. Add the asparagus, season with salt, and sauté for 5 to 7 minutes. They should be tender but still firm. Reserve some tips for garnish.
- Work the migas. Add the softened bread to the skillet and mix it with the asparagus. Add the remaining olive oil and work the mixture with a wooden spoon over medium heat for 8 to 10 minutes. Keep turning and pressing until a cohesive mass forms, with golden areas on the outside. Adjust salt and season with pepper.
- Poach the eggs. Bring a large pot of water to a gentle simmer. Add the vinegar. Crack each egg into a small bowl and carefully slide it into the water. Cook for about 3 minutes, until the whites are set and the yolks are still runny. Remove with a slotted spoon and drain.
- Serve. Divide the migas among four plates, place a poached egg on top of each serving, and finish with the reserved asparagus tips, a drizzle of olive oil, and coriander, if desired. Serve immediately.
How to achieve loose and golden migas
The most common mistake is adding too much water to the bread. Start with a little and give it time to absorb before adding more. If the migas are too moist, cook them for a few minutes without stirring constantly. A large skillet allows water to evaporate and creates more golden surface area.
Do not let the garlic burn: it will become bitter and overpower the delicate flavor of the asparagus. Also, do not cook the asparagus until it loses its texture. The tips usually need less time than the stalks and can be added a little later.

Use fresh eggs, as the white stays closer to the yolk. The water should not boil vigorously, as the movement will break the whites. For a creamy yolk, three minutes is usually enough; add another 30 to 60 seconds if you prefer a firmer yolk. Drain the eggs well so as not to wet the migas.
