Our reserve shoulder is actually an authentic gourmet shoulder!

It is obtained from the foreleg of Black Iberian Pig, with an intense, cured and lingering aroma. Of premium quality, each cured shoulder embodies all the characteristics of excellence, such as its natural richness (from the fat), giving it a marbled appearance with ruby-red, glossy tones.

This shoulder has a mildly salty and slightly acidic flavour. Showcasing the full flavour of cured shoulder in the RESERVE variety.
