Chouriço is a sausage made with pork and blood, salt, and spices, to which two distinct types of seasoning are added. Red wine is added to wine chouriço, while vinegar is added to vinegar chouriço.
With an intense flavor of both vinegar and wine, this type of product is commonly used to prepare “stews” and other dishes, giving them a unique flavor that can only be achieved with a product of this quality.
The entire mixture is stuffed into thin natural casings, which are then tied at intervals of 30–40 centimeters. These chouriços are separated and take on a circular shape. They are then hung individually in the smokehouse, where, when ready, they acquire a horseshoe shape.
