It is made from the foreleg of Black Iberian Pig, with an intense, cured and persistent aroma. Of premium quality, each cured shoulder embodies all the characteristics of excellence, such as its natural richness (from the fat), giving it a marbled appearance with ruby-red, glossy tones.
This shoulder has a mildly salty, slightly acidic flavour. It showcases all the flavour of cured shoulder in the RESERVA variety.
