Cartuxa Brut Rosé Sparkling Wine 2015 – DOC Alentejo–Évora

Analytical data: Alcohol (%) – 13.0 Total acidity (g/l tartaric acid) – 6.5 pH – 3.01 Total sugars (g/l) – 11.6

Harvest: manual, with careful selection of the grapes in the vineyard. Transported in small crates and unloaded directly into the press - whole-bunch pressing. Very gentle pressing cycles, with only the low-pressure cuvée must selected. Alcoholic fermentation in stainless steel tanks at controlled temperature. Aged on fine lees for 6 months with periodic bâtonnage, followed by a second fermentation in the bottle using the traditional method. Aged on lees for at least 36 months in the cellars of the Cartuxa Monastery.
