Chorizo is a sausage made with pork meat and blood, salt, and spices, to which two distinct types of seasoning are added. Red wine is added to wine chorizo, and vinegar is added to vinegar.
With an intense flavor, whether vinegar or wine, this type of product is commonly used to prepare stews and other dishes, giving them a unique flavor that can only be achieved with a product of this quality.
The entire mixture is stuffed into thin, natural casings, which are then tied at 30–40-centimeter intervals. These sausages are separated and shaped into circles. They are then hung individually in the smoker, forming a horseshoe shape when ready.
