How to choose cured meats: for snacking, cooking, or giving as a gift

For a quick starter, sliced meats are an easy option. If you want to slice at the table, choose a piece of painho. For a hot lunch of snacks, add cured meats that are suitable for cooking. The difference comes down to flavour, texture and how much work you want to do before sitting down.

The Black Pork Sliced Meat Pack includes paia de lombo, pancetta, paiola and paínho in four 100 g packs. It’s a practical choice for a varied charcuterie board, without having to slice whole pieces.

If you prefer to choose your cured meats individually, pair the Country-Style Black Pork Paio de Lombo, 100 g with the Country-Style Black Pork Painho, 100 g. Paio de lombo has a tender, low-fibre texture; painho adds the flavour of paprika, garlic and holm oak wood smoke.

Painho or paio de lombo?

For painho, the meat is cut and mixed with the seasonings before being stuffed into the casing. Paio de lombo is made from pork loin. The difference is clear when sliced: painho contains a mixture of meat and fat, while paio de lombo retains the muscle structure of the cut.

If you like to slice your sausage just before serving, we recommend the SEL Country-Style Black Pork Painho, 300 g. It has a soft texture, a marbled appearance and a smoky flavour. Alentejo bread and olives are all you need to serve it.

The Alentejo Black Pork Paínho, 330 g is another option for slicing. Remove the casing and leave it at room temperature for 30 minutes before serving, according to the product instructions.

Black pork or white pork?

As well as the type of pork, the cut used, the proportion of meat to fat, the seasoning and the curing process all matter. To choose between two sausages, compare these features and how you plan to use them. The label “black pork” does not, in itself, mean the pigs were fed acorns or that the product has PDO certification.

For roasting, grilling or adding to a stew

Alentejo White Pork Sausage, approximately 250 g is made with pork, paprika, garlic and spices. It can be served as is, grilled or added to stews, according to the product instructions. It’s a good choice if you want to use the same sausage both as a snack and in cooking.

The Black Pork Gathering Pack combines 200 g of country-style pork chouriço, 250 g of country-style morcela, 150 g of country-style farinheira, 300 g of country-style garlic painho and 170 g of country-style fuet. It lets you serve grilled sausages alongside cured ones sliced and ready to eat.

Farinheira and morcela: different textures

Farinheira combines pork fat, flour and seasoning to create a soft mixture. In morcela, blood is part of the ingredients and gives it its dark colour. Recipes vary between producers and regions. Serve farinheira cooked and follow the preparation instructions on each pack.

As a gift

If you prefer something ready to open and serve, choose the Sliced Black Pork Pack. For those who enjoy cooking, the Alentejo Sausage Selection includes painho and white pork chouriço, country-style pork chouriço and black pork morcela, and white pork farinheira.

Copo de vinho tinto

Wine and the rest of the table

To accompany Painho de Campo de Porco Preto, we recommend EA Tinto Reserva 2023 from the Eugénio de Almeida Foundation, served at 16 to 18 °C. If you prefer a full-bodied red with notes of black fruit and oak, try Vidigueira Reserva Tinto DOC.

Serve with Alentejo bread, olives and cheese. Our guide to aged or creamy cheese will help you choose an accompaniment.

Storing after opening

A whole piece and a pack of sliced meat may have different storage requirements, even when they are the same type of cured sausage. Check the temperature and instructions after opening on the label. Open only what you are going to serve and store the rest as instructed by the producer.
