  • 700 g ripe but firm tomatoes
  • 1 medium cucumber
  • 1 small green bell pepper
  • 1/2 small onion
  • 2 cloves garlic
  • 80 g black pork ham, thinly sliced
  • 200 g day-old Alentejo bread, cubed
  • 60 ml Galega Monovarietal Extra Virgin Olive Oil — 500 ml
  • 30 ml white wine vinegar, to taste
  • 750 ml very cold water
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

How to make Alentejo gazpacho with ham

  1. Prepare the seasoning base. In a mortar, crush the garlic cloves with a generous pinch of salt until a paste forms. Transfer it to a large bowl and add the vinegar, oregano, and olive oil. Mix well.
  2. Cut the vegetables. Wash the tomatoes, cucumber, and bell pepper. Dice the tomatoes and cucumber into small cubes. Remove the seeds and white pith from the bell pepper and cut it into small pieces as well. Finely chop the onion.
  3. Assemble the gazpacho. Add the vegetables to the seasoning bowl and toss. Gradually add the cold water, tasting between each addition. The broth should be light but with a defined flavor of tomato, garlic, vinegar, and olive oil.
  4. Adjust seasoning. Season with pepper and adjust salt, vinegar, and oregano. Keep in mind that the ham will add salt at the end.
  5. Chill. Cover the bowl and let it rest in the refrigerator for at least 30 minutes. This time helps the flavors meld without softening the vegetables too much.
  6. Serve. Divide the gazpacho into bowls. Add the bread cubes and finish with the ham strips and a very light drizzle of olive oil. Serve immediately.

How to get Alentejo gazpacho just right

Tomatoes are the base of the recipe and should be ripe, aromatic, and without overripe spots. If they release a lot of water, start by adding only 600 ml of cold water and adjust at the end. The goal is not to get a thick soup, but it should also not dilute the flavor of the vegetables.

Raw garlic intensifies in flavor while chilling. Two medium cloves are enough for four people; if they are large, use only one and taste after the gazpacho has cooled. The vinegar should provide freshness without dominating. Add it gradually, as it's easier to add more than to correct an excess.

Bread and ham: when should they be added?

Add the bread only when serving to maintain some structure. If you prefer a softer texture, let the cubes rest in the broth for two or three minutes. Avoid putting all the bread in the bowl in advance, as it will absorb the liquid and change the consistency.

The ham should also be added at the end. Slice it thin and into easy-to-eat pieces. Since it's already salty, always taste the gazpacho before adjusting the salt. There's no need to fry it: at room temperature, it releases its aroma better and maintains a delicate texture.
