Winemaking: Harvested with plot-by-plot selection of smaller, thick-skinned grapes from the Aragonez and Alicante Bouschet varieties. Fermentation in small vats, with individual mechanical treading for gentle extraction, interrupted by the addition of 77% grape spirit, preserving the grape's natural freshness and concentration. Aged for 8 years in used French oak vats and barrels.
