Ingredients for Alentejo gazpacho
- 700 g ripe but firm tomatoes
- 1 medium cucumber
- 1 small green pepper
- 1/2 small onion
- 2 garlic cloves
- 80 g black pork ham, cut into thin strips
- 200 g day-old Alentejo bread, cut into cubes
- 60 ml of Galega Monovarietal Extra Virgin Olive Oil — 500 ml
- 30 ml white wine vinegar, adjusted to taste
- 750 ml ice-cold water
- 1 teaspoon dried oregano
- Salt and freshly ground black pepper, as needed
How to make Alentejo gazpacho with ham
- Prepare the seasoning base. In a mortar, crush the garlic cloves with a generous pinch of salt until you have a paste. Transfer it to a large bowl and add the vinegar, oregano, and olive oil. Mix well.
- Cut the vegetables. Wash the tomatoes, cucumber, and pepper. Cut the tomatoes and cucumber into small cubes. Remove the seeds and white parts from the pepper and cut it into small pieces as well. Finely chop the onion.
- Assemble the gazpacho. Add the vegetables to the bowl with the seasoning and toss to combine. Gradually add the cold water, tasting after each addition. The broth should be light but have a well-defined flavor of tomato, garlic, vinegar, and olive oil.
- Adjust the seasoning. Season with pepper and adjust the salt, vinegar, and oregano. Bear in mind that the ham will add salt at the end.
- Chill. Cover the bowl and leave it to rest in the refrigerator for at least 30 minutes. This time helps the flavors come together without making the vegetables too soft.
- Serve. Divide the gazpacho among bowls. Add the bread cubes and finish with the strips of ham and a very light drizzle of olive oil. Serve immediately.
How to get the right consistency for Alentejo gazpacho
The tomato is the foundation of the recipe and should be ripe, aromatic, and free of spoiled spots. If it releases a lot of water, start by adding only 600 ml of cold water and adjust at the end. The goal is not to make a thick soup, but the flavor of the vegetables should not be diluted either.
Raw garlic becomes more intense as it rests. Two medium cloves are enough for four people; if they are large, use only one and taste after the gazpacho has cooled. The vinegar should add freshness without dominating. Add it gradually, as it is easier to add more than to correct an excess.
When should the bread and ham be added?
Add the bread only when serving to preserve some structure. If you prefer a softer texture, let the cubes rest in the broth for two or three minutes. Avoid adding all the bread to the bowl in advance, as it absorbs the liquid and changes the consistency.
The ham should also be added at the end. Cut it thinly and into bite-sized pieces. As it is already salty, always taste the gazpacho before adjusting the salt. There is no need to fry it: at room temperature, it releases its aroma better and retains its delicate texture.
